Tiramisu with Matcha Kinako
Ingredients
Mascarpone 250g
Double cream 100ml
Sponge fingers 15 - 20
Matcha kinako 1tbs
Sugar 2tbs
Syrup 1tbs
Almond drink 200ml
Method
Pour the almond drink into a flat shallow bowl and warm in the microwave for 30 sec
Add the matcha kinako and mix well
Add the sponge fingers in a flat layer and let them soak
Put the mascarpone, half the sugar and half the syrup into a separate bowl and mix well
Put the double cream, half the sugar and half the syrup into a third bowl and whisk until stiff
Add the mascarpone mixture (step 4) to the cream mixture (step 5) and combine
Layer the mixture (from step 6) and the sponge fingers (from step 3) in serving glasses
Leave them in the fridge for 1 hour
Sprinkle the matcha kinako on top
popcorn with sesame Kinako
Ingredients
Popcorn kernels 3tbsp
Sesame kinako 3tbsp
Brown sugar 3tbsp
Butter 2tbsp
Vegetable oil or sunflower oil 1tbsp
Pinch of salt
Water 1tbsp
Method
Heat the oil in a pan over a medium heat
Add the popcorn kernels and cover with a lid. Regularly shake the pan to make sure popcorn cook evenly
Turn off the heat once popcorn stop popping
Sprinkle sesame kinako over the popcorn but do not stir yet
Add the butter, sugar and water to a separate bowl and microwave for 1 minute (high)
Pour the microwaved mixture over the popcorn and mix well
Add a pinch of salt
Sprinkle extra sesame kinako on top (optional)
Microwave cup cake with cocoa kinako
Ingredients·
Medium egg x 1
Flour 4 tbsp
Cocoa powder 1tbsp
Cocoa kinako 1tbsp
Brown sugar 3 tbsp
Baking powder ½ tsp
Almond drink 3 tbsp
Vegetable or sunflower oil 2 tbsp
Method
Add flour, baking powder, cocoa powder, cocoa kinako and brown sugar to the mug and mix
Add medium egg and almond milk and mix well
Add vegetable oil or sunflower oil and mix until smooth
Centre your espresso cups in the middle of the microwave and cook on high for 1.5 minutes, or until it’s firm to the touch
Sprinkle cocoa kinako on top (optional)
chia seed pudding with plain Kinako
Ingredients
Banana x1
Chia seeds 1tbsp
Almond drink 1/2cup
Plain kinako 1tbsp
Date syrup (optional)
Method
Mash the banana in a bowl
Add chia seeds, almond drink and mix to combine
Leave for 30 minutes then mix well again
Place in the fridge over night (or at least 6 hours)
Add Plain kinako and mix to combine
Pour date syrup on top (optional)
